We would like to inform you about an entirely new assortment of cheeses to be served at La Finestra. The supplier is Vittorio Beltrami, a producer of fine Italian cheeses. He is famous for his pecorino di fossa, eeps milk cheese matured underground, and Caprino cheeses, traditionally made from unpasteurized goat´s milk, along with a wide assortment of speciality aged cheeses. Mr. Beltrami is called the Italian Einstein and has been recognized as the best cheese maker from the Marche region. Our restaurants, La Finestra and Aromi, along with our shop La Bottega, have been chosen as the main importer of his products. Mr. Beltrami is the supplier for some of the best restaurants worldwide including Alain Ducasse in Paris or Harrods Georgian Restaurant in London. We are now delighted to be one of the selected few in the world that are able to offer you these unique cheeses.
Cheese Master Vittorio Beltrami also produces extra virgin olive oil with selected olives grown and harvested in Cartoceto. Gastronomy Beltrami also prepares jams and jellies known for extravagant combinations including or such as strawberry, wild mint, cinnamon, pears, apples and sage. The special jams are prepared to suit the individual cheeses unique flavour profile.
